
Sweet potato soup with lentils

If you are looking for a way to improve your immunity, this soup is for you. Cooked in collagen broth that soothes the gut, with warming ginger and pumpkin seeds that provide zinc and magnesium. Added to that are sweet potatoes, lentils, kale, which are carbohydrates, protein, fiber and antioxidants that have anti-inflammatory effects.
Time: 15 min
Ingredients (for 3-4 people):
- 500 ml collagen broth
- 1 small carrot
- 1 small onion
- 1 stalk of celery
- 200 ml coconut milk
- 2 cm piece of ginger
- 1 small sweet potato
- 100 g cooked lentils (from a jar or can)
- 50 g pumpkin seeds
- A handful of kale
- Salt
- Pepper
- Oil
Instructions:
- In a pot, in olive oil, fry onion, carrot and celery until soft. Pour in MOG broth and after a while add coconut milk, finely chopped ginger and diced sweet potatoes.
- Toast the pumpkin seeds in a pan.
- Add the lentils and seeds to the soup pot and cook for a few more minutes until the sweet potatoes are soft. Add the kale for the last 2 minutes of cooking.
- Add salt, pepper & enjoy.
