
Mushroom Extra Healthy

A soup packed with health. Adzuki beans naturally support body detoxification, mung bean strengthens the heart, and green leaves support hormonal health.
Time: 30 min
Ingredients for 4 people:
- 500 ml of MOG vegetable broth
- 1 leek
- 2 cloves of garlic
- 200 g boletes or other mushrooms (shiitake, oyster mushrooms, button mushrooms)
- 50g adzuki beans
- 50g mung beans
- a handful of fresh Tuscan kale leaves
- 2 tablespoons olive oil
- salt and pepper
- Rinse the adzuki and mung beans thoroughly under running water. Place in a pot, add water to cover the beans and simmer for about 25-30 minutes, until the beans are soft but not mushy.
- Heat a tablespoon of olive oil in a pot. Add the sliced boletus mushrooms and fry over medium heat for about 5–7 minutes, until golden. Transfer the mushrooms to a plate.
- In the same pot, heat the second tablespoon of olive oil. Add the sliced leek and finely chopped garlic. Fry for about 5 minutes, until the leek is soft and fragrant, being careful not to burn the garlic.
- Pour the broth into the pot, add the beans and cook for a few more minutes.
- Finally, add a handful of kale, season with salt, pepper & enjoy.
