Minestrone

Apparently there is a family in Italy with a Guinness record for "average life expectancy" and when asked what the secret to their shape is they say in unison: "a bowl of minestrone a day." Vegetables, legumes, green leaves, colors - the definition of an anti-inflammatory diet, and with MOG broth, it comes out quickly and deliciously.
Time: 30 min
Ingredients (for 4 people):
- 500ml beef collagen broth MOG
- 1 carrot
- 2 stalks of celery
- Half an onion
- A clove of garlic
- 250 g peeled tomatoes
- 200g white beans, cooked or from a can/jar
- 2 large potatoes
- 100g pasta
- A solid handful of spinach
- Salt and pepper
- Oil
Instructions:
- In a pot, fry onion, garlic, carrots and celery in olive oil until soft. Pour in MOG broth, then add tomatoes.
- Mash half of the beans with a fork, leave the other half whole. Dice the potatoes. Add everything to the pot and cook for 15 minutes.
- Finally, add the pasta, then the spinach and cook for a few more minutes. Season with salt, pepper, and eat.
- If the soup becomes too thick after adding the pasta and potatoes, you can add a little water.
