MEATBALL

Comfort food has never been so comfortable. Because how else can you describe meatball soup? Somewhere in the world, but not in Italy, they call it Italian wedding soup (a bit like our non-Greek fish in Greek).

Time: 20 min

Ingredients for 2 people:

  • 500 ml MOG broth
  • 1 carrot
  • 1 celery stalk
  • 1 small onion
  • A handful of spinach
  • Pearl couscous
  • 400 g turkey meat
  • 1 egg
  • Parsley
  • Salt
  • Turmeric
  • Pepper
  • Optionally, some spelt flour if you can't make meatballs

Instructions:

  • Add the egg, finely chopped parsley, salt, turmeric and pepper to the meat. Form the meatballs and bake them in an oven preheated to 200 degrees for 15 minutes.
  • In a pot, fry the onion, carrots, and celery. Then pour in the MOG broth, add the meatballs and spinach and cook for another 2 minutes.
  • Serve with pearl couscous.
