
SOBA WITH BEEF

MOG Beef Broth is the perfect base for Asian soups. Just add a few ingredients and you're done! The version with soba noodles, pumpkin and shimeji mushrooms will warm you up, satisfy your senses and soothe your bellies.
Time: 15 min
Ingredients for 2 people:
- 500 ml of MOG collagen beef broth
- 2 tablespoons of high quality soy sauce
- 1 tablespoon rice vinegar
- A few sprigs of coriander
- 3 cloves of garlic
- Pumpkin or other vegetable such as pak choy
- Soba noodles or rice noodles
- Shimeji or shiitake mushrooms
- Sesame seeds for sprinkling
- Chili oil
Instructions:
- Heat the broth in a pot, add the soy sauce, rice vinegar, cilantro and garlic. Cook for 15 minutes.
- Meanwhile, prepare the noodles and any other ingredients you are using. If using pumpkin, cook it until soft in a separate pot. Pak choy and shimeji or shiitake mushrooms can be added directly to the soup pot.
- Remove cilantro and garlic from the broth.
- Place the pasta in a bowl, add the toppings and pour in the soup.
- Sprinkle with sesame seeds and chili oil, if using.
